Gujarati Dal is a beautifully balanced dish that combines sweet, tangy, and mildly spiced flavors, making it a staple in Gujarati households. What makes this dal special is its unique blend of jaggery, tamarind, and aromatic Indian spices, creating a comforting yet vibrant taste. This recipe takes around 35 minutes in total, including 10 minutes of preparation and 25 minutes of cooking time, and serves two people perfectly.
To begin, take 1/2 cup of toor dal (arhar dal), wash it thoroughly, and pressure cook it with 1½ cups of water, 1/4 teaspoon turmeric, and a pinch of salt for about 3 to 4 whistles until soft and mushy. Once cooked, whisk the dal well to achieve a smooth consistency and set it aside. In a deep pan, heat 2 tablespoons of ghee or oil, then add 1/2 teaspoon mustard seeds and let them crackle. Add 1/2 teaspoon cumin seeds, a pinch of asafoetida (hing), and 8–10 curry leaves. For that authentic Gujarati aroma, add 2 dried red chillies and sauté briefly.
Next, add 1 finely chopped tomato and cook until it becomes soft. You can also add a small piece of grated ginger and 2 finely chopped green chillies for extra flavor. Now pour in the cooked dal and mix well. Add 1 to 1½ cups of water depending on your preferred consistency. This is where Gujarati dal gets its signature taste—add 1 tablespoon jaggery (gur) for sweetness and 1 tablespoon tamarind pulp for tanginess. Mix well and let it simmer on low flame for about 10 minutes so all the flavors blend together.
Now enhance the flavor with your special Indian masala touch by adding 1/2 teaspoon red chilli powder, 1 teaspoon coriander powder, and a small pinch of garam masala. For a more aromatic twist, you can also add a pinch of cinnamon powder or clove powder. Adjust salt as needed and let the dal simmer for another few minutes until slightly thick yet flowing in consistency.
Finally, garnish with freshly chopped coriander leaves and a squeeze of lemon juice if desired. Gujarati Dal is best served hot with steamed rice, jeera rice, or even soft phulkas, making it a comforting and complete meal. For an extra festive touch, you can finish it with a drizzle of ghee on top just before serving, which enhances both aroma and richness.
