Paneer Bhurji Masala is a delicious and protein-rich North Indian dish made with crumbled paneer cooked in a flavorful onion-tomato masala infused with aromatic spices. Known for its slightly spicy, tangy, and buttery taste, this dish is a perfect option for a quick lunch, dinner, or even a filling breakfast when paired with pav or roti. The recipe comes together in about 25 minutes, with 10 minutes of preparation and 15 minutes of cooking time, and serves two people comfortably.
To begin, take 200 grams of fresh paneer and crumble it using your hands or grate it coarsely to get a soft, bhurji-like texture. In a pan, heat 2 tablespoons of oil or butter. Add 1 teaspoon cumin seeds and let them splutter, then add 1 finely chopped medium onion and sauté until it turns light golden. Next, add 1 tablespoon of ginger-garlic paste and cook for about a minute until the raw smell disappears. You can also add 1 to 2 finely chopped green chillies at this stage for extra heat.
Now add 2 finely chopped medium tomatoes and cook until they become soft and the oil starts to separate from the masala. This step ensures a rich base. Add spices including 1/2 teaspoon turmeric powder, 1 teaspoon red chilli powder, 1 teaspoon coriander powder, and salt to taste. Mix well and cook the masala for 2 to 3 minutes so the flavors blend properly.
Add the crumbled paneer to the pan and mix gently so it gets evenly coated with the masala. Cook on low flame for about 5 to 7 minutes, stirring occasionally. You can add a few tablespoons of water or milk to keep the bhurji moist and soft. For enhanced flavor, add 1/2 teaspoon garam masala and a pinch of kasuri methi (crushed between your palms), which gives it a nice restaurant-style aroma.
Finish the dish by adding a tablespoon of butter for richness and garnish with freshly chopped coriander leaves. Paneer Bhurji Masala is best served hot with butter pav, roti, paratha, or even as a stuffing for sandwiches and rolls. For an extra creamy version, you can add a tablespoon of fresh cream at the end, making the dish even more soft and indulgent.
